Description

This Spinach Mushroom Lasagna is a comforting, hearty vegetarian dish featuring seven layers of tender noodles, sautéed mushrooms, fresh spinach, creamy ricotta, rich marinara sauce, and melted mozzarella and Parmesan cheeses. Lasagna Components

  • 9 lasagna noodles
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 2 cups ricotta cheese
  • 2 cups marinara sauce
  • 2 cups mozzarella cheese, shredded
  • 1/2 cup grated Parmesan cheese

Seasonings

  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste


Instructions

  1. Preheat the oven: Set your oven to 375°F (190°C) to get it ready for baking the lasagna later.
  2. Cook the noodles: Boil the lasagna noodles according to the package instructions until al dente. Drain and set aside to cool slightly.
  3. Sauté mushrooms: Heat a skillet over medium heat and sauté the sliced mushrooms until they become soft and release their moisture.
  4. Add spinach: Add the fresh spinach to the skillet with the mushrooms and cook until the spinach is wilted, stirring occasionally.
  5. Mix ricotta cheese: In a bowl, blend the ricotta cheese with garlic powder, Italian seasoning, salt, and pepper to create a flavorful cheese mixture.
  6. Prepare baking dish: Spread a thin layer of marinara sauce on the bottom of your baking dish to prevent sticking and add flavor.
  7. Assemble first layers: Lay down 3 cooked lasagna noodles, then spread half of the ricotta mixture evenly over them, followed by half of the mushroom and spinach mixture, and cover with one-third of the shredded mozzarella cheese.
  8. Repeat layers: Repeat the layering process with 3 more noodles, the remaining ricotta mixture, remaining mushroom and spinach mixture, and another one-third of the mozzarella.
  9. Final layer: Top with the remaining 3 noodles, spread the remaining marinara sauce over the noodles, and sprinkle with the last third of mozzarella and all of the Parmesan cheese.
  10. Bake the lasagna: Place the assembled lasagna in the preheated oven and bake for 30-35 minutes or until the sauce is bubbly and the cheese is golden brown on top.
  11. Cool and serve: Remove the lasagna from the oven and let it cool for 10 minutes to set before slicing and serving.

Notes

  • You can substitute fresh spinach with frozen spinach (thawed and drained) if fresh is not available.
  • For a richer flavor, add a layer of shredded mozzarella between the noodles and ricotta mixture.
  • If desired, add herbs like fresh basil or oregano on top for garnish.
  • Use no-boil noodles to skip the boiling step and save time; just increase baking time slightly and add extra sauce to ensure noodles cook through.
  • Leftovers keep well in the fridge for up to 3 days and can be reheated in the oven or microwave.
