Ingredients
Scale
Filling
- 1 cup strawberries, chopped
- 1/2 cup cream cheese, softened
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
Eggrolls
- 10 eggroll wrappers
- Oil for frying (about 2 cups)
- Additional strawberries for serving (optional)
Instructions
- Prepare the filling: In a bowl, mix the softened cream cheese, powdered sugar, and vanilla extract until smooth and well combined.
- Add strawberries: Gently fold in the chopped strawberries into the cream cheese mixture, ensuring even distribution without crushing the berries.
- Fill eggroll wrappers: Place one spoonful of the strawberry cheesecake mixture in the center of each eggroll wrapper.
- Fold and seal: Fold the wrappers by bringing the corners together and seal the edges with a little water to ensure they are secure and won’t open during frying.
- Heat oil: Pour oil into a pan and heat over medium heat until it reaches approximately 350°F (175°C) or until hot enough to sizzle a small piece of wrapper.
- Fry eggrolls: Carefully place the filled eggrolls in the hot oil, frying them until they become golden brown and crispy on all sides, about 2-3 minutes per side.
- Drain excess oil: Remove the eggrolls with a slotted spoon and place them on paper towels to drain the excess oil.
- Serve: Enjoy the eggroll bites warm with optional additional fresh strawberries for a refreshing finish.
Notes
- Make sure the cream cheese is softened to ensure a smooth filling.
- Do not overfill the eggroll wrappers to prevent them from bursting while frying.
- Maintain medium heat when frying to avoid burning and to cook evenly.
- These bites are best served fresh and warm for optimal taste and crispiness.
- You can substitute powdered sugar with a sugar alternative for a lower-sugar version.
