Description

These Strawberry Lemonade Popsicles are a refreshing and easy-to-make treat perfect for hot days. Made with fresh or frozen strawberries, fresh lemon juice, honey or agave for sweetness, and a bit of water, they offer a naturally sweet and tangy flavor. Blended to a smooth consistency and frozen in popsicle molds, they provide a healthy, vibrant snack or dessert for both kids and adults.

Ingredients

Scale

Strawberry Lemonade Mixture

  • 3 1/2 cups fresh or frozen strawberries (thawed, if frozen)
  • 1/4 cup fresh lemon juice (from 2 lemons)
  • 2-3 tablespoons honey or agave syrup (adjust to taste)
  • 3/4 cup water

Instructions

  1. Prepare the Strawberry Lemonade Mixture: In a blender, combine the strawberries, fresh lemon juice, honey or agave, and water.
  2. Blend: Puree the mixture until completely smooth to ensure a consistent texture for the popsicles.
  3. Adjust Sweetness: Taste the mixture and add additional honey or lemon juice as needed to suit your preference, then blend briefly again if any adjustment is made.
  4. Fill the Popsicle Molds: Using a funnel if you have one, carefully pour the blended mixture into the popsicle molds.
  5. Insert Sticks and Cover: Place the lids on the molds and insert the popsicle sticks securely into each mold.
  6. Freeze: Place the molds in the freezer for 3 to 4 hours or until the popsicles are fully solidified.
  7. Enjoy: Once frozen, remove the popsicles from the molds and enjoy this refreshing homemade treat.

Notes

  • You can adjust the sweetness based on your taste preference by varying the amount of honey or agave.
  • If using frozen strawberries, make sure they are fully thawed before blending to get a smooth texture.
  • Use fresh lemon juice for the brightest, freshest flavor.
  • To easily remove the popsicles from molds, run warm water over the outside of the mold just for a few seconds.
  • Storage: Keep leftover popsicles in the freezer in an airtight container for up to one week for optimal freshness.
