Instructions

  1. Soak the Rice: Soak the glutinous rice in water for at least 4 hours or overnight to soften the grains and ensure even cooking.
  2. Steam the Rice: Drain the soaked rice and place it in a bamboo steamer lined with cheesecloth. Steam for 25-30 minutes until the rice is tender and sticky.
  3. Prepare Coconut Sauce: In a saucepan over low heat, combine the coconut milk, sugar, and salt. Stir gently until the sugar dissolves completely without bringing the mixture to a boil.
  4. Mix Rice with Coconut Sauce: Transfer the cooked sticky rice to a bowl and pour half of the warm coconut mixture over it. Mix well so the rice absorbs the flavors. Let it rest for 20 minutes for full flavor absorption.
  5. Slice Mangoes: Peel and slice the ripe mangoes into thin strips, ideal for rolling.
  6. Assemble Rolls: On a bamboo sushi mat or a piece of parchment paper, place about ¼ cup of the coconut-infused sticky rice. Add several mango slices on top, then roll tightly like sushi. Repeat this process with the remaining ingredients.
