Instructions
- Soak the Rice: Soak the glutinous rice in water for at least 4 hours or overnight to soften the grains and ensure even cooking.
- Steam the Rice: Drain the soaked rice and place it in a bamboo steamer lined with cheesecloth. Steam for 25-30 minutes until the rice is tender and sticky.
- Prepare Coconut Sauce: In a saucepan over low heat, combine the coconut milk, sugar, and salt. Stir gently until the sugar dissolves completely without bringing the mixture to a boil.
- Mix Rice with Coconut Sauce: Transfer the cooked sticky rice to a bowl and pour half of the warm coconut mixture over it. Mix well so the rice absorbs the flavors. Let it rest for 20 minutes for full flavor absorption.
- Slice Mangoes: Peel and slice the ripe mangoes into thin strips, ideal for rolling.
- Assemble Rolls: On a bamboo sushi mat or a piece of parchment paper, place about ¼ cup of the coconut-infused sticky rice. Add several mango slices on top, then roll tightly like sushi. Repeat this process with the remaining ingredients.
