Scale
Filling
- 2 medium sweet potatoes (about 500 grams)
- 3/4 cup brown sugar (about 150 grams)
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1 teaspoon vanilla extract
- 4 tablespoons unsalted butter, melted (about 60 grams)
- 2 large eggs
Topping
- 1 cup pecans, toasted and roughly chopped (about 120 grams)
Crust
- 1 (9-inch) pre-made pie crust (about 230 grams)
Instructions
- Prepare the crust: Place the pre-made pie crust into a 9-inch pie dish and crimp the edges to fit snugly.
- Bake the sweet potatoes: Bake the sweet potatoes whole until tender, then peel and mash them in a large mixing bowl until smooth and creamy.
- Mix the filling: Add brown sugar, ground cinnamon, ground nutmeg, vanilla extract, melted butter, and eggs to the mashed sweet potatoes. Mix thoroughly until the filling is smooth and creamy.
- Prepare pecan topping: Toast the pecans until fragrant, then roughly chop them and set aside.
- Assemble the tart: Pour the sweet potato filling into the prepared pie crust, smoothing the top evenly with a spatula.
- Add pecan topping: Sprinkle the chopped toasted pecans evenly over the filling and gently press them down so they adhere well.
- Bake the tart: Bake the assembled tart in a preheated oven at 350°F (175°C) for 45-50 minutes, or until the filling is set and the top is golden brown.
- Cool and serve: Remove the tart from the oven and let it cool at room temperature for at least 30 minutes before slicing and serving to allow the filling to firm up.
Notes
- You can bake sweet potatoes wrapped in foil at 400°F for about 45 minutes if in a hurry.
- Be sure not to underbake the tart; the filling should be firm to the touch after baking.
- For extra flavor, consider adding a pinch of salt to the filling mixture.
- Use fresh spices for best flavor.
- Serve with whipped cream or vanilla ice cream for an indulgent dessert.
