  • 1 packet (1 ounce) taco seasoning
  • 3/4 cup water

  • 1 red bell pepper, chopped
  • 1 can (15 ounces) corn, drained
  • 1 can (4 ounces) sliced black olives, drained

Dairy and Pasta

  • 1 cup shredded cheddar cheese
  • 1 container (8 ounces) garden vegetable cream cheese
  • 8 ounces No Yolks® extra broad noodles


Instructions

  1. Cook the Ground Beef: In a large non-stick skillet over medium-high heat, cook the lean ground beef or chicken until browned and crumbled. Drain off any excess grease to keep the dish from being too oily.
  2. Add Seasoning and Vegetables: Stir in the dried minced onion, taco seasoning packet, and 3/4 cup water. Add the chopped red bell pepper and drained corn to the skillet. Bring the mixture to a boil, then reduce the heat to low. Stir occasionally and let it simmer for 10 minutes to let the flavors meld.
  3. Cook the Noodles: While the meat mixture simmers, cook the 8 ounces of No Yolks® extra broad noodles in a large pot of boiling water according to the package directions, usually around 8-10 minutes. Drain well when done.
  4. Add the Cheeses to the Skillet: To the meat and vegetable mixture in the skillet, add the shredded cheddar cheese and the container of garden vegetable cream cheese. Stir continuously over low heat until the cheeses melt fully and create a creamy sauce.
  5. Combine and Serve: Gently fold the sliced black olives and the drained noodles into the skillet mixture until everything is well combined and heated through. Serve the Taco Noodle Skillet warm for a hearty and comforting meal.
