Instructions
- Preheat and Prepare Baking Dish. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish to prevent sticking.
- Cook the Sausage and Vegetables. In a large skillet over medium heat, cook the ground breakfast sausage until browned, breaking it apart as it cooks. Add the diced onion, red bell pepper, and minced garlic to the skillet and sauté until the vegetables are softened and fragrant, about 5 minutes. Drain excess grease if necessary.
- Prepare Egg Mixture. In a large bowl, whisk together the eggs, milk, garlic powder, kosher salt, pepper, and dry ground mustard (if using) until well combined.
- Assemble the Casserole. Spread the cooked sausage and vegetable mixture evenly in the bottom of the prepared baking dish. Sprinkle 1 cup of shredded Colby jack cheese over the sausage layer. Pour the egg mixture evenly over the cheese and sausage. Top the casserole evenly with the frozen tater tots, arranging them in a single layer for even cooking. Sprinkle the remaining 1/2 cup cheese over the tater tots.
- Bake the Casserole. Place the baking dish in the preheated oven and bake for 45-50 minutes, or until the eggs are set, the casserole is bubbly, and the tater tots are golden and crispy.
