Ingredients
Scale
Peach Filling
- 4 cups freshly sliced peaches (canned peaches work great too, drained of juice)
- 2 Tablespoons granulated sugar
Topping
- 1 cup granulated sugar
- 1/2 cup salted butter, softened
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- Tiny pinch of salt
- Pinch of nutmeg (optional)
- 1 large egg
- 1 teaspoon vanilla extract
Instructions
- Preheat oven and prepare dish: Preheat your oven to 350°F (175°C). Grease a 2-quart baking dish with non-stick spray to ensure easy removal of the cobbler once baked.
- Arrange peaches and sugar: Spread the freshly sliced peaches in a single layer evenly in the prepared baking dish. Sprinkle 2 tablespoons of granulated sugar over the top of the peaches to sweeten and help draw out the juices.
- Make the cobbler topping: In a medium bowl, use an electric hand mixer to beat 1 cup of granulated sugar together with the softened salted butter until well combined and creamy. Add the flour, baking powder, salt, and nutmeg (if using), and mix to incorporate. Then add the egg and vanilla extract, continuing to beat until just combined. The batter should have the consistency of cookie dough.
- Assemble the cobbler: Take pieces of the dough and flatten them with your hands. Carefully place these chunks across the top of the peaches. It’s not necessary to cover all the peaches completely; the topping can be dolloped unevenly.
- Bake the cobbler: Place the baking dish in the preheated oven and bake for 36 to 40 minutes, or until the crust turns golden brown and is cooked through.
- Cool and serve: Remove the cobbler from the oven and allow it to stand for 5 to 10 minutes before serving. For an extra special treat, serve warm with vanilla ice cream or whipped cream.
Notes
- You can use canned peaches as a convenient alternative to fresh, but make sure to drain the juice thoroughly to avoid a soggy cobbler.
- The nutmeg is optional but adds a lovely warmth to the flavor of the topping.
- Don’t worry if the cobbler topping doesn’t cover all the peaches; it will still bake up beautifully and be delicious.
- Allowing the cobbler to rest a few minutes after baking helps the filling set and makes serving easier.
