Instructions
- Heat olive oil: Heat 2 tablespoons of olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
- Sauté base vegetables: Add the chopped onion, sliced carrots, and chopped celery to the pot. Cook until these vegetables become soft and fragrant, about 5-7 minutes.
- Add remaining vegetables: Stir in the minced garlic, diced zucchini, and chopped bell pepper. Cook the mixture for about 5 minutes, allowing the veggies to soften further and release their flavors.
- Add liquids and herbs: Pour in the can of diced tomatoes with their juice and the 4 cups of vegetable broth. Then add the dried thyme and dried basil to infuse the stew with herby aroma.
- Simmer the stew: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30 minutes. This allows the flavors to meld and the vegetables to fully tenderize.
- Season and serve: Season the stew with salt and pepper to taste. Stir well, then serve the stew hot for a comforting meal.
