Description

This comforting veggie stew combines fresh vegetables and aromatic herbs simmered in a flavorful vegetable broth, creating a wholesome and hearty meal perfect for warming your soul.

Ingredients

Scale

Vegetables

  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 garlic cloves, minced
  • 1 zucchini, diced
  • 1 bell pepper, chopped

Liquids & Canned Goods

  • 1 can diced tomatoes (approx. 14.5 oz)
  • 4 cups vegetable broth

Herbs & Spices

  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Oils

  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil: Heat 2 tablespoons of olive oil in a large pot over medium heat to prepare for sautéing the vegetables.
  2. Sauté base vegetables: Add the chopped onion, sliced carrots, and chopped celery to the pot. Cook until these vegetables become soft and fragrant, about 5-7 minutes.
  3. Add remaining vegetables: Stir in the minced garlic, diced zucchini, and chopped bell pepper. Cook the mixture for about 5 minutes, allowing the veggies to soften further and release their flavors.
  4. Add liquids and herbs: Pour in the can of diced tomatoes with their juice and the 4 cups of vegetable broth. Then add the dried thyme and dried basil to infuse the stew with herby aroma.
  5. Simmer the stew: Bring the mixture to a boil, then reduce the heat to low and let it simmer uncovered for 30 minutes. This allows the flavors to meld and the vegetables to fully tenderize.
  6. Season and serve: Season the stew with salt and pepper to taste. Stir well, then serve the stew hot for a comforting meal.

Notes

  • Feel free to add other vegetables like potatoes or green beans for more variety.
  • To make the stew heartier, add cooked beans or lentils.
  • Serve with crusty bread or over cooked rice for a complete meal.
  • This recipe is naturally gluten free and vegetarian.
