Description

This Whipped Feta Bruschetta Dip is a refreshing and vibrant appetizer that combines creamy whipped feta with a bright tomato and basil bruschetta topping. Perfect for serving with crispy crostini, this dish delivers a delightful balance of tangy, savory, and fresh flavors in just 30 minutes.

Ingredients

Scale

Bruschetta Topping

  • 1 cup diced heirloom cherry or grape tomatoes
  • 1 small garlic clove, finely minced
  • 6 large basil leaves, julienned
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon salt
  • Freshly ground black pepper, to taste

Crostini

  • 1 demi French baguette, cut diagonally into ½ inch slices (about 10 slices)
  • 1 tablespoon extra virgin olive oil
  • 1 small clove garlic, peeled

Whipped Feta Dip and Garnish

  • 1 batch Creamy Whipped Feta Dip (recipe or store-bought)
  • Balsamic glaze, for drizzling
  • 6-10 small basil leaves, for garnish

Instructions

  1. Make the bruschetta topping: In a medium-sized bowl, combine the diced tomatoes, finely minced garlic, julienned basil, olive oil, balsamic vinegar, salt, and freshly ground black pepper. Mix gently to combine and set aside to allow flavors to meld.
  2. Prepare the crostini: Preheat the oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil. Rub one side of each slice with the peeled garlic clove to impart a subtle garlic flavor. Place slices on a baking sheet and bake until golden and crisp, about 8-10 minutes. Remove from oven and let cool slightly.
  3. Whip the feta: Prepare a batch of Creamy Whipped Feta Dip by blending crumbled feta cheese with cream cheese, olive oil, lemon juice, and seasonings until light and smooth. This creates a rich and creamy base for the bruschetta topping.
  4. Assemble: Spread the whipped feta evenly in a serving bowl. Spoon the prepared bruschetta topping over the whipped feta. Drizzle generously with balsamic glaze and garnish with small basil leaves for a fresh finishing touch.
  5. Serve: Serve the bruschetta dip immediately alongside the warm crostini slices. Enjoy this flavorful appetizer as a perfect start to any meal or a delightful snack during gatherings.
