Instructions

- Reduce Grapefruit Juice: Zest and juice your grapefruits. Pour 1 cup of the fresh grapefruit juice into a saucepan. Heat it over medium-high heat until the juice reduces to approximately ½ cup, about 10-12 minutes. This intensifies the flavor for the filling.
- Prepare Crust: In a mixing bowl, combine 1 cup all-purpose flour, ¼ cup granulated sugar, and ¼ teaspoon kosher salt. Cut in ½ cup cold unsalted butter until the mixture resembles coarse crumbs. Press this dough evenly into the bottom of the prepared pan to form the crust.
- Bake Crust: Bake the prepared crust in the preheated oven for 10 minutes, until lightly golden. Remove from the oven and let it cool slightly.
